SWEET TREATS: Chocolate energy bites

Is anyone else always in awe of how good energy balls look? They always looks so satisfyingly rolled and they look like little bites of heaven. They take very minimal prep, no cooking and you don’t even need to wait for them to set in the fridge to taste them! Perfect. In fact, knowing that these are sitting in the fridge is pretty bad for the temptation levels, do not eat anymore Amy, NO MORE!! Anyway, here’s my take on the energy ball.


What you need:
1 cup puffed rice
1/4 cup shelled hemp seeds
1/2 cup oats
1/8 cup cacao powder
1/4 cup agave syrup
1/3 cup peanut butter
Optional 1 desert spoon protein powder

Grab yourself a mixing bowl, in here you need to add the puffed rice, hemp seeds (I always use Rise Organic), oats and cacao powder (for this I used Choc Chick so that I could add a cinnamon flavour but any cacao will work a treat) then stir until the dry mix is all lovely and chocolatey! If you want to add an extra kick of protein, add a desert spoon of Pulsin Rice Protein and mix it in.

In a smaller bowl measure out the agave syrup and peanut butter, if you prefer a different nut butter then just swap it out, they all work! Once the syrup and peanut butter are well mixed and all gooey, pour it into the dry mix and get stirring again. This looks like it won’t come together but I promise it does. Once the two mixes are completely combined then it’s time for the messy bit! Get your hands in the bowl and start separating the mix into small balls. You should get 14 balls if you measure them out as a heaped tablespoon, the mix will stick to you hands but if you keep them wet with some cold water it won’t be too bad.

Now you can keep them in the fridge and snack on them when you need a little boost or you need a guilt free chocolate fix! If you measure them out correctly (14 balls) they are only 104 calories per ball.
