Sometimes I get a carb craving that can only be satisfied with pasta but it’s no secret that gluten free pasta isn’t great. Here I’ve used Tesco’s free from tagliatelle and it’s one of the better pastas that I’ve tried.
Here’s how I’ve prepared mine, you need:
75g tagliatelle (dried weight)
1 small handful of rocket
8 cherry tomatoes, halved
1 chicken thigh
1 teaspoon of garlic purée
A few grates of lactofree cheese
This only serves one so if you’re cooking for you and your beau just double the ingredients. I always have chicken thighs cooked in my fridge and freezer, they are so handy for a quick dinner – I just pop a few on a baking tray and shove them in the oven.
Cook the tagliatelle in boiling water but don’t leave it for a second! There’s a teeny, tiny, fine line between gluten free pasta being cooked and sloppy as hell. Typically this takes only 10-12 minutes, once your pasta is cooked drain it and run some boiling water over it, this seems to make the pasta less stodgy. Hurl the pasta back into the pan, squidge in the garlic purée and return it to the heat for 5 minutes, take off the heat.
Chop the chicken and cherry tomatoes, pop them into the saucepan with the pasta and garlic. Give it a good stir, add the rocket, stir again and plonk it all in bowl or on a plate. Grate some lactofree cheese on the top and enjoy this easy peasy lemon squeezy gluten free pasta dish.
