It’s coming to that time of year again, the nights are closing in, the mornings are getting cold and dark – boo! For me this is a great excuse to start perfecting some new soup recipes again. This winter I have promised to myself that I will stop chucking vegetables into a pan and hoping for the best and start recording my soup recipes. So here is the first, it’s a soup that never fails to make me feel better and give me a good boost, lets face it green food always looks so darn healthy!
What you need:
1 broccoli tree
1/2 a potato
1/2 an onion
1 cup of frozen peas
1 vegetable stock cube (always check that it’s gluten free)
1 cup of spinach
1/2 a block of feta cheese
Pepper
Grab yourself a large pan, chop your half a potato and onion into small cubes and full the pan with warm water, crumble the vegetable stock cube in too. This can be left to boil away for about 20 minutes before you need to add anything else, while your stock is boiling away you can start chopping the broccoli florets. Once the potato is starting to soften you can add the broccoli and peas. Then once everything is softening, cooking and pipping hot you’ll be able to add the spinach, feta and grind some pepper. These only need to go in at the last minute because they don’t need too much cooking, now you can blend and enjoy.
This soup is so green, it always reminds me of my green smoothie that just oozes vitamins!
