Chocolate pudding? But you’re vegan, you can’t eat chocolate pudding! HELL YEH I CAN. I think that lots of people assume that eating a vegan diet is all humous and carrots, ok bad example because that’s my favourite snack but if you’re smart about what you eat you can banish that feeling of FOMO (yeh I didn’t feel right typing that either). Anyway, this super speedy and simple pudding is perfect for your chocolate cravings.
What you need:
1 carton of silken tofu
1/4 cup of cacao powder
1/4 cup of agave syrup
Fruit to top
Firstly, drain your tofu. Grab your blender and throw in the tofu, cacao powder and agave syrup then blend. Pour the pudding out into little bowls and serve! EASY PEASY! Instead of plain cacao I used CHOC Chick, here I used the cinnamon flavour and it worked a treat! Read about the hot chocolate here.
To serve, I added some chopped mixed nuts and raspberries.
