I don’t know about you but at this time of year I start looking forward to spring and I don’t want to eat porridge anymore, it’s perfect for the cold, dark mornings of winter but now we’re in March I like to ditch the porridge. But oats are such a good way to start the day?! A friend of mine sent me am overnight oats recipe about this time last year and I’ve been a total convert ever since!
This is how I like to do them.
Here’s what you need:
1/2 cup of oats
1/2 cup of soya yoghurt
1/2 cup of oat milk
1 banana
Sprinkling of flaked almonds
Grab a jar, it could be an old jam jar or a mason jar like mine here. Pop in the oats, yoghurt and milk, you can swap the milk for any milk that you’d prefer. Give the mix a really good stir and chop the banana into really small chunks before adding it in to the jar. Then all you need to do is seal it and leave the jar in the fridge overnight, by the morning it’ll be all lovely and thick. This is why they are perfect for anyone who feels a little lazy in the morning, I mean who really wants to be packing breakfast and lunch before 7am? Not me for sure!
Serving suggestion: Add some frozen berries, they will defrost overnight and be lovely by morning. Plus it goes a gorgeous pink colour, what’s not to love?
