Green food makes my soul happy, whether it’s a green smoothie or a bowl of this pea soup, there’s something about the colour green that makes you feel instantly healthier right? Back when I was eating meat, pea and ham soup used to be my all time fave soup so I’ve been avoiding pea soups until my meat cravings subsided. Seven months in and I think it’s time to start eating pea soup again (but without the ham).
What you need:
1 teaspoon coconut oil
1/2 cup of red onion
1 cup of potato
3 cups of cold water
2 cups of frozen peas
1 tablespoon yeast flakes
Salt and pepper to taste
Grab yourself a medium to large saucepan and start melting your coconut oil gently. While this is melting get chopping! Chop your red onion into small chunks, peel your potato and chop them into small chunks too. Throw the red onion in with the oil first, keep the hob on a medium heat, wait until it smells all delicious and then onion starts to look translucent, now it’s time to throw in the potatoes and water. Let the pan simmer away until the potatoes are pretty soft before adding the frozen peas and yeast flakes. You can just let this bubble away until everything is cooked, it takes about 15 minutes on a medium heat, add salt and pepper to taste. Once everything is cooked, simply blend until smooth and enjoy immediately or cool and take to work for lunch. It’s easy enough to double the quantities and make a portion for dinner with leftovers for lunch.
With this soup I like to blend it then let it simmer in the pan for a little longer so that it thickens up into a green goop! It’s better than it sounds.
