Ok from the title of this post you might be thinking that this is a recipe that’s totally bad for you, well not quite! Choose your ingredients well and you’ll have a treat that’s not that bad on your waistline. Remember last week I posted the PB + J cookies? Here’s another version.
What you need:
1 cup of peanut butter (crunchy or smooth)
1 egg
1 cup of sugar
1/2 cup of dark chocolate chips
Sprinkling of sea salt
Preheat the oven to 180c and get two baking trays out, line them with grease proof paper. Like the last cookies you only need mix together the peanut butter, egg and sugar. I prefer smooth peanut butter but crunchy works just as well, try and buy a good quality peanut butter take a look at the ingredients and don’t buy a jar with loads of additives and sugar!
Once your mix is all combined, add in the chocolate chips, I always use high quality dark chocolate chips so there’s no dairy in them. That way it feels like a chocolatey treat but without the dairy guilt. Spoon the mix into balls with a tablespoon and squash them out on the baking trays.
Once you’ve got all the cookies ready for the the oven, sprinkle the sea salt over them. As in the previous recipe, watch these babies in the oven they only take 10 minutes, once they are cooked get the onto a wire tray to cool and scoff them with a cup of tea.
