Eating breakfast foods for dinner is one of my all time favourite guilty pleasures, I remember sitting with my parents and eating a full, fried breakfast for dinner as a child, yum! But eating a full fry probably isn’t the best dinner so yesterday I tried a more grown up breakfast for dinner option.
What you need
2 rashers of unsmoked bacon
3 slices of tomato
3 slices of feta cheese
A small handful of spinach
2 slices of gluten free bread, toasted
First, cook your bacon, I like to do mine under the grill so it goes nice and crispy. While the bacon is cooking, slice your feta with your tomato and toast your gluten free bread. Then it’s as simple as layering on your feta, followed by your bacon, then tomato and top with the spinach et voila breakfast for dinner the good way.
