SWEET TREATS: Chocolate bites

Happy New Year little readers! Whilst I usually don’t like to make new years resolutions but this year I’ve made the decision to start eating a plant based diet, now don’t fear, I will not be one of these people who will sit here behind my laptop telling you what to eat. Instead I am going to carry on eating good food and sharing my recipes and ideas with you, they will just be vegan recipes. Here is the first, chocolate bites. I got up on New Years Day feeling reasonable refreshed after a night of sipping on mulled cider and thought I need to start 2016 how I mean to go on, making something tasty to eat later!

What you need:
1 bar of dairy free chocolate
1/3 cup of crushed pistachios
1/3 cup of dried blueberries

Grab yourself a sheet of greaseproof paper, flatten it out on your kitchen work surface ready for your little chocolate bites. I don’t have a microwave so I always melt my chocolate in a bain marie, put some hot water in a small pan, place a glass bowl on top if the pan and melt the chocolate in there. Do it nice and slowly, stirring as it melts so that you don’t burn it. Once it’s all melted, start spooning it out into small rounds on the greaseproof paper, make them as small or large as you like, I like to make mine nice and small so they are bite sized.

When you have your chocolate drops laid out, simply sprinkle the nuts and blueberries on evenly. Obviously you can use anything you’d like in the chocolates, swap the nuts for seeds, switch the blueberries for raisins, it’ll all work! Put the chocolate bites in a tin, store them somewhere cool and enjoy with a cuppa.
